Pancakes are a delicious breakfast staple, but they don't support my journey toward weight loss. As I was browsing Pinterest for low point Weight Watchers recipes, I came across a recipe for banana pancakes that were zero (yes 0!) points. So of course I made them- and thank goodness, they came out delicious.
I got the recipe from http://eugeniekitchen.com/banana-pancakes/?ref=nf but I tweaked it a bit to make more pancakes and stay fuller for longer.
Ingredients:
-2 ripe bananas
-3 eggs
-1/2 teaspoon of baking powder
1. Crack three eggs into a bowl and add in the 1/2 tsp. of baking powder. Whisk together.
2. In a separate mixing bowl, use a fork to mash 2 bananas. Leave some banana chunks.
3. Combine both bowls.
4. Turn on the stove to medium/low heat and place your frying pan on top. Wait until it warms up. Use small (the smaller the easier to control) scoops of batter into the pan. You can flip the pancake when you can see the baking powder activated (it will start to bubble). Cook for about another minute.
Tips:
1. As Eugenie mentions, it is very hard to control the flip of the pancake because it tends to be quite runny. The smaller they are, the easier for sure.
2. You can also add chocolate peanut butter powder for a thicker batter. Every two tablespoons adds two points to the recipe.

Here was my finished product! While they didn't look too beautiful, it did taste very yummy and the berries on top were a plus. They also kept me full for quite some time which is great considering all of this was zero points! I will definitely be making these again.
